炆魚餅是基絲汀媽媽的拿手好菜。她常用來炆蘿蔔,有時炆白菜仔。香港的白菜仔(短腳那種,即莖少葉多)特別鮮甜。可惜那種白菜仔在澳洲很少見,而長長白莖的那種就多見。好啦,沒最愛的,退而求其次。不過,用它來煮魚餅並不失禮,頗鮮甜。

至於魚餅,用甚麼白魚肉均可,只要它能膠黏著,譬如鮫魚(mackerel)是蠻不錯的選擇。肉質較有彈性。煎香之後,就可以吃。但用來煮自己喜歡吃的青菜也可口。這道菜有家鄉風味,是嗎?
