一向愛飲南瓜湯的囡囡,今次可以大快朵頤。就連罐頭南瓜湯也可飲得津津有味,這個傳統口味的南瓜湯,由新鮮一級靚南瓜 butternut squash(澳洲這裏叫 Butternut pumpkin)煮成的。當然是無可抗拒,她飲了兩大碗啊!




材料:
500克 南瓜
1個白洋蔥(切幼粒)
600毫升 雞湯(或清水加雞精粒)
25克牛油
300毫升 熱奶
雜香料(allspice)少許
鹽、胡椒粉各少許
香菜(parsley)少許作裝飾

做法:
1.先把南瓜批皮,切粗粒,約5cm大小。
2.放25克牛油在大熱鍋中,以中慢火把洋蔥粒炒約十分鐘或至軟身。
3.加入雞湯煮滾後,放入南瓜粒,以文火煮材料,全部稔身(大約30分鐘)。放涼後,用一攪拌器打勻,再放入煲內,加熱奶,香料,鹽和胡椒粉,試味直到覺得合味為止。如果喜歡的話,可以上盤的時候,加點忌廉 cream或 parsley裝飾。趁熱供食。



Ingredients:

1 white onion (finely chopped)
600ml chicken stock (or water and chicken stock cube)
25gm butter
300ml hot milk
Pinch of allspice
Salt and pepper
Parsley for garnish (optional)

Method:
1.Peel pumpkin and cut into 5cm chunks.
2.Melt butter in a large saucepan and gently fry onions for 10 minutes or until onion is soft. Pour in chicken stock and bring to boil. Add pumpkin chunks to stock and simmer until tender, (about 30 minutes). Cool. Puree and return to pan, add hot milk, allspice, salt and pepper to taste and heat gently. Serve hot with lightly sprinkle chopped parsley or cream as desired.
