酒 精
學名乙醇, 一般是用含糖之原料或含澱粉的穀類為原料,經發酵蒸餾製得。
酒 度
  溫度在攝氏 20 度時,每 100ml 酒液中所含純酒精的毫升數。如高梁酒是 38 度,就是說在攝氏 20 度時 100ml 酒液含純酒精 38 ml ( 即百分之三十八 )。飲用酒一般不超過 68 度,最高有 67 度,過高就不太適於飲用。
酒 色
是酒液帶有顏色的酒紅、咖啡、金黃、籃、綠等。例 紅葡萄酒 梅子酒
白 酒
酒液無色,一般酒精度高,辛辣刺激味較重,像高梁酒、米酒。
酒度區分
高酒度:40 度以上, 中酒度:20 ~ 40 度, 低酒度:20 度以下。
酒的甜度
就是說在於 100g 酒液中含糖分百分比。
