用料   蝦 12只  生抽 1湯匙  
料酒 2湯匙  糖 2茶匙  
番茄醬 1茶匙  清水 3湯匙  
姜 1小塊  蔥 2段  

做法   
1.  
蝦建議選個頭差不多大的為宜。剪蝦足、去蝦鬚,用刀給下開背,挑出蝦腺。開背的蝦會更加入味  

2.  
鍋中倒入約2湯勺的油,放入蔥段和薑片,待煎至薑片 ​​收縮,蔥段變成褐色取出  

3.  
放入處理好的蝦,煎至一面變紅後,再煎另一面。烹入料酒,調入生抽,加糖翻炒均勻  

4.  
姜切絲,放入鍋中。再加入番茄醬炒勻  

5.  
加入少量清水,蓋上蓋子適當小燜片刻,待湯汁減少  

6.  
大火收汁即可盛出
