食材
草莓 適量

A
無鹽奶油 20g 鮮奶 25g

B
蛋 150g 細砂糖 60g 低筋麵粉 60g

C
動物性鮮奶油 120g 細砂糖 10g

作法
1準備25*25cm烤模並鋪上烘培紙,及直徑6~7cm圓形慕斯模


2將A隔水加熱至融化備用

3將B蛋及砂糖隔水加熱,並用打蛋器邊攪拌至手觸摸蛋液微溫即離火

4繼續用電動攪拌器高速攪打,打至舀起蛋液滴落時蛋液不易消失

5再輕輕拌入過篩低筋麵粉至無粉粒

6挖取一些步驟5至步驟2中,攪拌均勻,再倒回步驟5中

7從高處倒步驟6至烤模中,並將烤模輕敲桌子數下以震出氣泡


8放入預熱170度烤箱烤10~11min

9出爐後立刻脫模並撕開四周的烘培紙,待5~10min後準備翻面


10在蛋糕上方蓋一張烘培紙,並翻面且撕開原本(沾黏於蛋糕底部)的烘培紙


11拿直徑6~7cm圓形慕斯模在蛋糕上押出圓形小蛋糕(約可押8~9個)


12將C隔冰塊水用電動攪拌器攪打至鮮奶油尾端呈堅挺即可

13 可開始裝飾小蛋糕
