食材
煉乳 190g 鮮奶 190g 蛋黃 5顆 黃砂糖 少許

作法
1在鋁箔烤模上均勻灑上黃砂糖


2製作焦糖層用夾子夾住烤模以小火,在瓦斯爐上加熱至黃砂糖融化成焦糖色,再將烤模底部泡冷水降溫使焦糖凝固(焦糖不要烤過頭會變苦)


3製作布丁液將蛋黃攪散後加入煉乳,攪拌均勻再將鮮奶拌入,以濾網過濾氣泡及雜質,將液體倒入烤模中並蓋上鋁箔紙封緊


4電鍋內放蒸架,電鍋外鍋放一杯水



小撇步
1.化焦糖時要注意鋁箔烤模離火的高度及糖焦化程度.
2.蒸布丁時錫箔紙要封緊,避免水滴進布丁會變成蜂巢狀.
3.隨時注意布丁在蒸鍋的狀態,以免蒸過頭布丁變甜蒸蛋.
4.此配方的布丁較甜,可斟酌煉乳用量
