食材
厚切梅花豬肉 500g 新鮮香菇 5~6朵 屏東洋蔥 一顆 【李錦記舊庄特級蠔油】 2大匙(約30ml) 醬油 一大匙(約15ml) 味霖 一大匙(約15ml) 香油 少許 洋香菜末(裝飾) 少許

作法
1厚切梅花豬肉切成骰子塊狀(約3X3X3cm)。


2一小匙油潤鍋加熱後,放入豬肉塊稍煎表面金黃。(如果溶出多餘油脂,留下約一大匙油量,其餘盛出炒菜可用。)


3將豬肉塊以適當鍋具盛出。洋蔥切約1cm粗絲,中火炒軟後另外盛放。(不洗鍋)


4原鍋入【李錦記舊庄特級蠔油】、醬油燒至起泡出醬香味後,倒入500ml清水及味霖,一邊用鍋鏟輕輕撥下鍋壁附著的淺黃色物體,直至完全融化於湯液中。(這是炒洋蔥生成的自然糖分,是美味來源喔!)


5將第四步驟完成的湯液倒進盛裝豬肉塊的鍋具,煮滾後蓋上鍋蓋,小火續煮30分鐘至肉塊軟化


6加入炒過的洋蔥絲,煮透收汁至適當。再放香菇煮滾


7試味道後以鹽調整,並淋上少許香油後即可起鍋
