食材
糖粉 160g 杏仁粉 120g 蛋白 3顆 細砂糖 15g 可可粉 1大匙 鮮奶油 250g 糖粉(裝飾用) 適量 覆盆莓(裝飾用) 適量

果醬
覆盆莓 100g 細砂糖 25g

作法
1烤箱預熱至150度糖粉,可可粉與杏仁粉過篩至鋼盆備用


2蛋白以電動打蛋器打至起泡後,分兩次加入細砂糖打至硬性發泡


3加入粉類輕輕拌勻後,裝入擠花袋


4烤盤鋪上烘焙紙,將麵糊擠成約7cm的圓形(約可做16個),靜置20分鐘


5烤箱溫度降到130度,送入烤盤烤約18分鐘,取出放涼


6覆盆莓,細砂糖放入小鍋加熱,煮成果醬放涼


7鮮奶油先打成奶昔狀,再加進覆盆莓果醬打發

8蛋白餅抹上適量覆盆莓鮮奶油,再灑些糖粉做裝飾就完成了
