食材 ( 2 人份 )
蝦仁 400g 甘䉀 2段 杏仁片 20g 九層塔葉 4片 雞蛋 1隻 紅蘿蔔 半

作法
1先把蝦仁洗淨去腸,抺乾

2蝦仁用刀背壓成泥後剁至蝦蓉狀


3調味料: 鹽1茶匙 糖1茶匙 胡椒粉半茶匙 麻油半茶匙 太白粉1茶匙 攪拌均勻後進行摔打,手掌拿起蝦蓉再摔打回碗,重複此步驟大約15下,直至產生黏性,即成蝦膠

4九層塔葉, 紅蘿蔔切碎,備用

5把已剁好的蝦蓉放入一個大碗,下調味料和九層塔, 紅蘿蔔碎攪拌


6然後把蝦膠放入冰箱冷凍2小時


7取出蝦膠,分成5等份。手沾少許水,取蝦膠放在掌心,雙手壓平,放蔗於已壓平的蝦膠中間,然後包裹䉀,甘䉀的頭和尾兩端留2cm不包蝦膠

8雞蛋攪拌成蛋漿,將蝦膠均勻地沾上


9然後再均勻蘸上杏仁片並壓實


10燒熱油鍋,油要滾但不用出煙,約150度。以中火把䉀蝦炸約3分鐘至表面金黃色,撈起瀝油,即可
