親子烹飪素食蔬食「香酥猴菇」
材料:
猴頭菇、番茄、薑末、脆酥粉
調味料:
鹽、香菇粉、香油、黑胡椒
作法:
1. 將番茄洗淨,切除蒂頭後切圓薄片,排成圈狀於盤中待用。
2. 酥脆粉加適量的水調成糊狀。
3. 猴頭菇洗淨,切片,擠乾水分後加入所有調味料及薑末,拌勻略醃製入味,然後每片沾裹上一層粉糊,再放入燒熱的榨油裡,炸至表面金黃即可撈出,滴乾油後排在番茄片中間,附上胡椒鹽或番茄醬沾食。
Ingredients:
monkey mushroom, tomato, minced ginger crisp deep-frying powder
Seasonings:
salt, shiitake mushroom powder, light sesame oil, black pepper
Methods:
1. Rinse tomato well, discard the stem and cut into round thin sliced. Arrange in a circle on the serving plate.
2. Combine crisp deep-frying powder well with suitable amount of water to make batter.
3. Rinse monkey mushrooms and cut into slices. Squeeze out the excess water, marinate with all the seasonings along with minced ginger added until flavour is absorbed. Remove and coat each slice with a layer of batter. Deep-fry in smoking oil until golden on surface. Remove and drain well, then transfer to the center of the tomato sliced. Serve with pepper salt or ketchup as a dip.
